When we set out to make a new jerky with some real heat, we looked for ideas far beyond our border. After all, our jerkies are inspired by Jewish foods, flavors and people from across the globe.
Throughout Nigeria, Cameroon and Ghana, tens of thousands of Black Jews live, pray and celebrate Jewish life in their own vibrant ways. And when it comes to snacks, many of them love kilishi—a spicy, sun-dried jerky that’s full of heat.
Closer to home, we had the good fortune to work in our test kitchen with Temi Jemilusi, a Nigerian-born chef and owner of Fit Prep Meals, to help us create our boom-bang-hot version of West Africa’s favorite jerky.
Our new Kilishi Style is erupting with flavor and packs a layered, lingering heat (we use three different kinds of chili peppers). It’s also a nod of respect to West African Jewish communities whose stories — and flavors — are often overlooked.
